Preheat your oven to 275°F (135°C). In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast generously with salt and pepper, then sear it on all sides until deeply browned, about 2 minutes per side. Transfer the roast to a cutting board or plate. In the same pot, sauté the chopped onion until it begins to brown, about 4–5 minutes, adding the minced garlic during the last minute.
