Ingredients
- 9 al dente cooked lasagna noodles
- 2 cups cooked shredded chicken (rotisserie works great)
- 1 cup fresh asparagus (trimmed and cut into 1-inch pieces)
- 1 cup sugar snap peas (trimmed and halved)
- 1 cup diced yellow bell pepper
- 1 cup baby spinach leaves
- 1 cup shredded carrots
- 2 minced garlic cloves
- 1/2 cup chopped fresh basil
- 2 tablespoons olive oil
- 3 cups Alfredo sauce (homemade or high-quality store-bought)
- 2 1/2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté garlic for 1 minute until fragrant.
- Add asparagus, sugar snap peas, bell pepper, and carrots. Sauté for 3-4 minutes until just tender. Stir in spinach and basil until wilted. Remove from heat.
- Butter a 9×13-inch baking dish and spread a thin layer of Alfredo sauce on the bottom.
- Layer 3 lasagna noodles, half of the veggies, half of the chicken, 1 cup mozzarella, and 1/3 cup Parmesan. Repeat the layers.
