Ingredients:

  • 1/4 cup diced deli ham
  • 5 slices bacon, cooked and crumbled
  • 2 large eggs
  • 2 green onions, chopped (whites and greens)
  • 1 cup Colby cheese, shredded
  • 1/2 tablespoon butter
  • Additional flour for handling dough
  • Buttermilk (as needed for biscuit dough)

Preparation:

Start by preparing your favorite biscuit dough recipe, stopping just before adding the milk. Set the dough aside.

In a small skillet, melt the butter over medium heat. Add the chopped green onions and sauté for 1-2 minutes until softened. Crack the eggs into the skillet and gently scramble them until they just begin to set. Remove from heat and set aside.

In the biscuit mixture, combine the cooked bacon, diced ham, scrambled eggs with onions, and shredded Colby cheese. Use a fork to toss everything together until well combined. Slowly add the buttermilk to the mixture, using the fork to pull the dough together into a soft, slightly sticky consistency.

Preheat your oven to 425°F (220°C). Grease an iron skillet or baking sheet. With well-floured hands, pinch off portions of the biscuit dough, roll them into balls, and place them on the prepared pan. Lightly flatten the tops of the biscuits.

Bake for 15-17 minutes, moving the pan from the bottom rack to the top rack halfway through baking to ensure even browning. Once done, remove the biscuits from the oven and rub the tops with butter for a golden, buttery finish.
