Ingredients

For the Peach Filling:

  • 3 large fresh peaches or 2 cans Freestone peaches
  • 4 TBSP unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 cup orange juice
  • 2 TBSP cornstarch

For the Cake Batter:

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 5 large eggs
  • 1 1/2 cups unsalted butter, softened
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp baking powder
  • 1 cup whole milk
  • 1 tsp pure vanilla extract
  • 1 tsp almond extract

Preparation

Preheat your oven to 350°F (175°C). Start by preparing the peach filling. In a saucepan, combine all filling ingredients and heat over medium heat until the mixture thickens and bubbles. Remove from heat and let it cool.

Next, grease and flour a large bundt pan. In a bowl, whisk together the flour, baking powder, cinnamon, and nutmeg. Set aside.

In a mixing bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and almond extracts.

Alternately add the flour mixture and milk to the batter, mixing until just combined. Avoid overmixing! Pour half of the batter into the prepared bundt pan. Spread the cooled peach filling over the batter, leaving some for topping. Add the remaining batter on top and smooth it out.

Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool for 30 minutes before inverting it onto a platter. Drizzle the remaining peach filling on top for an extra burst of flavor.

Serve this Peach Cobbler Pound Cake warm or at room temperature and enjoy the perfect blend of sweet and spicy flavors!
