Ingredients
For the Cake:
- 5 egg whites, room temperature
- ¾ cup buttermilk
- ¾ cup unsalted butter, softened to room temperature
- 1 ¾ cup granulated sugar
- 1 tsp vanilla extract
- ½ tsp almond extract
- 2 ½ cup cake flour
- 1 Tbsp baking powder
- ½ tsp kosher salt
- 1 cup shredded, sweetened coconut
For the Frosting:
- ½ cup unsalted butter, softened
- 1 package (8 oz) cream cheese, softened to room temperature
- 5 cups powdered sugar
- ¼ cup heavy cream
- 2 cups shredded, sweetened coconut
Preparation
For the Cake:
1. Preheat your oven to 350°F (175°C). In a small bowl, whisk together the egg whites and ¼ cup buttermilk until slightly combined. Set aside.
2. In a large mixing bowl, beat the softened butter, granulated sugar, vanilla extract, and almond extract for 2 minutes on medium speed. Scrape down the sides of the bowl as needed.
3. Add the cake flour, baking powder, and kosher salt to the wet ingredients. Mix until just combined.
4. Gradually add the egg white mixture and mix until fully blended. Incorporate the remaining buttermilk and beat for an additional 3-4 minutes, scraping down the bowl as needed.
5. Gently fold in the shredded coconut. Spray two 9-inch cake pans with baking spray and divide the batter evenly between them. Bake for 26-28 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
For the Frosting:
1. In a mixing bowl, beat the softened butter and cream cheese for 3 minutes using a whisk attachment on an electric mixer.
2. Gradually add the powdered sugar and heavy cream, beating for an additional 4-5 minutes until smooth and creamy. Scrape down the sides of the bowl as needed.
Assembly:
1. Place one cake layer on a cake stand. Spread a generous amount of frosting on top and smooth it with an offset spatula. Add the second cake layer and frost the entire cake.
2. To decorate, place the cake stand on a baking sheet to catch excess coconut. Press handfuls of shredded coconut gently onto the sides and top of the cake until fully covered.
3. Slice, serve, and enjoy this heavenly Old Fashioned Coconut Cake with your loved ones!
