Glaze Ingredients:
- 2 tablespoons fresh lemon juice
- 1 tablespoon melted butter
- 1 cup confectioners’ sugar
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside. In a large mixing bowl, whisk together the melted butter, granulated sugar, fresh lemon juice, and eggs until smooth. In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Gently fold in the grated lemon zest, chopped walnuts (if using), and fresh or frozen blueberries. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. To make the glaze, whisk together the fresh lemon juice, melted butter, and confectioners’ sugar until smooth. Drizzle the glaze over the cooled lemon blueberry bread and enjoy!
