  • Sugar – 135g
  • Baking powder – 6g
  • Egg yolks – 3
  • Egg whites – 4
  • Butter – 75g (melted)
  • Honey – 36g
  • Water – 105ml (boiling)
  • Ginger powder – 6g

For the Creamy Frosting:

  • 33% cream – 240ml
  • Yoghurt (8% fat) – 120g
  • Cream thickener – 12g
  • Powdered sugar – 60g (adjust to taste)

For Decoration:

  • Gingerbread cookies – 36g (crushed)

Preparation

1. Prepare the Sponge Cake: In a mixing bowl, combine egg yolks, a portion of sugar, and ginger powder. Mix until smooth. Add melted butter and honey, blending well. In a separate bowl, whisk egg whites until stiff peaks form, gradually adding the remaining sugar. Sift flour and baking powder into the egg yolk mixture, then gently fold in the egg whites. Stir in boiling water, mixing quickly. Pour the batter into a lined cake tin, cover with foil, and bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until a toothpick comes out clean. Let cool, then slice into 4 layers.

2. Make the Creamy Frosting: In a chilled bowl, whip the cream with powdered sugar and thickener until stiff peaks form. Gradually fold in the chilled yogurt, ensuring a smooth consistency. Adjust sweetness as needed.

3. Assemble the Cake: Spread the frosting between layers and on the top and sides of the cake. Decorate with crushed gingerbread cookies. Chill for 2-3 hours before serving.

4. Serve and Enjoy: Pair this decadent ginger cake with a cup of tea or coffee for the perfect dessert experience.
