Ingredients
For the Cake:
- 1 box (15.25 ounces) yellow or butter cake mix (Betty Crocker or Pillsbury recommended)
- 3/4 cup vegetable oil
- 3/4 cup pineapple juice
- 4 large eggs
For the Icing:
- 2 cups powdered sugar
- 3/4 cup pineapple juice
- 4 tablespoons unsalted butter
Preparation
Preheat your oven to 325°F and grease and flour a 10-12 cup Bundt pan. In a large bowl, combine the cake mix, vegetable oil, pineapple juice, and eggs using an electric mixer. Beat the mixture for about 2 minutes until smooth. Pour the batter into the prepared pan and bake for 30 to 36 minutes.
While the cake cools slightly in the pan, prepare the icing. In a small saucepan, combine the powdered sugar, pineapple juice, and butter. Cook over medium-low heat, stirring frequently, until the butter melts and the mixture is smooth. Pour the hot icing over the warm cake in the pan. Let it cool for an additional 15-20 minutes, allowing the cake to absorb most of the glaze. Finally, invert the cake onto a serving platter and enjoy!
