  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • 400 g grated Monterey Jack cheese
  • 100 g butter, divided
  • 1 tablespoon dried onion seasoning (e.g., Pampered Chef Three Onion Rub)
  • 1 teaspoon Herbes de Provence
  • 1/2 cup buttered round crackers (e.g., Ritz®️), crushed

Preparation

Preheat your oven to 190°C (375°F). Bring a large pot of lightly salted water to a boil. Cook the elbow macaroni and dried chopped onion until the pasta is al dente, about 8 minutes. Drain and set aside. In a saucepan, combine evaporated milk and heavy cream. Heat over medium heat. In a small bowl, whisk flour and eggs until smooth. Gradually add the warm milk mixture to the eggs, whisking constantly to avoid curdling. Return the mixture to the saucepan and cook over medium-low heat, stirring frequently, until thickened, about 5-10 minutes. In a separate pot, melt 50 g of butter over medium heat.
