  • 1 1/2 teaspoon finely chopped serrano chile (about 1 medium)
  • 2 teaspoons dried thyme
  • 13 oz Baby Yukon Gold Potatoes, cut into quarters (about 2 cups)
  • 1 garlic clove, thinly sliced (about 1 small spoon)
  • 1/2 cup white wine
  • 3 cups ripe cherry tomatoes (about 1 pound)
  • 1 1/4 tsp salt
  • 1/4 teaspoon ground white pepper
  • 1/2 cup freshly shredded basil

Preparation

Step 1: Using a sharp knife, make a 1/4-inch deep incision along the back of each shrimp shell from head to tail. Leave the shell and head intact. Use a damp paper towel and a paring knife to remove and discard the vein. Pat the shrimp dry and set aside.

Step 2: Heat 1/4 cup of olive oil in a large skillet over medium-high heat until shimmering and very hot. Add the shrimp and sauté until the shells are lightly charred, about 1 minute. Transfer the shrimp to a plate.

Step 3: Reduce the heat to medium. Add the leeks, serrano chile, and thyme, and sauté until the leeks are sizzling, about 30 seconds. Add the potatoes and garlic, cover, and cook, shaking the pan frequently, until the edges of the potatoes begin to brown, about 5 minutes. Uncover, add the white wine, and cook, stirring occasionally, until the liquid has almost evaporated, about 5-6 minutes.

Step 4: Add the cherry tomatoes, cover, and cook until the tomatoes start to burst and release their juices, and the potatoes are tender, about 8 minutes. Return the shrimp to the pan and cook, stirring occasionally, until the shrimp are fully cooked and the tomatoes are soft, about 2-3 minutes. Season with salt and white pepper, then stir in the fresh basil.

Step 5: Divide the dish among 4 shallow bowls, drizzle with the remaining 2 tablespoons of olive oil, and serve immediately. Enjoy this flavorful, gourmet meal that’s perfect for any occasion!
