Ingredients:
- 4 cups beef broth
- 2 8-ounce cans tomato sauce
- 1/2 cup uncooked long-grain rice
- 1 bay leaf
- 3 tsp brown sugar
- 2 tsp fresh parsley
- 2 small spoons extra virgin olive oil
- A pinch of sea salt & freshly ground pepper
- 1 pound lean ground beef
- 1 large onion, finely diced
- 2 tsp minced garlic
- 4 cups chopped green cabbage
- 2 carrots, thinly sliced
Preparation:
Step 1: In a large pot, heat the extra virgin olive oil over medium heat. Add the lean ground beef and season with freshly ground pepper and sea salt. Cook, breaking the meat apart with a spatula, until the beef is browned, about 6 minutes. Add the minced garlic and finely diced onion, and cook for an additional 4 minutes until fragrant and softened.
Step 2: Stir in the sliced carrots, chopped green cabbage, beef broth, uncooked long-grain rice, 8-ounce cans tomato sauce, bay leaf, and brown sugar. Season with additional sea salt and freshly ground pepper to taste. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 25-30 minutes, or until the rice is fully cooked and the vegetables are tender.
