Ingredients

  • 3 Tbsp unsalted butter, melted
  • 24 golden Oreos, divided
  • 1¼ Cup strawberries, medium diced
  • 1 Tbsp sugar (for strawberries)
  • 1 Tbsp water
  • 2 tsp fresh lemon juice
  • ½ tsp cornstarch
  • 8 oz cream cheese, softened
  • ⅓ Cup sour cream
  • ⅓ Cup sugar (for cheesecake)
  • ½ tsp vanilla extract
  • 1 large egg

Preparation

Preheat your oven to 350°F (175°C). In a food processor, pulse half of the golden Oreos until they form fine crumbs. Add the melted butter and pulse again until the crumbs are evenly coated. Press the mixture firmly into the bottom of an 8-inch square baking pan lined with parchment paper. Bake for 5 minutes, then remove and let cool on the counter.

In a small saucepan, combine the diced strawberries, 1 Tbsp sugar, and 1 Tbsp water. Bring to a boil, then cover and simmer for 10 minutes, stirring occasionally, until the strawberries are soft. In a small bowl, mix the lemon juice and cornstarch, then stir this into the strawberry mixture. Simmer for an additional minute until thickened. Transfer the strawberry mixture to a food processor and pulse until smooth. Set aside.

Pour half of the strawberry sauce over the cheesecake layer, reserving the remaining sauce for serving or other uses (like adding to lemonade!). Bake at 325°F (160°C) for 36 minutes or until the cheesecake is just slightly jiggly in the center. Remove from the oven and let cool on a wire rack.

Crush the remaining golden Oreos and sprinkle them over the top of the cheesecake bars, gently pressing them into the surface.
