Ingredients
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 1 cup unsalted butter, room temperature
- 1/2 cup powdered sugar
- 1/2 Tbsp. vanilla extract
- 3/4 cup maraschino cherries, chopped (spread on a paper towel to remove excess liquid, or use dried maraschino cherries)
- 2/3 cup chocolate chips (mini or regular)
Preparation
Start by chopping the maraschino cherries and placing them on a paper towel to absorb any extra liquid. In a mixing bowl, combine the flour and salt, then set aside. In a larger bowl or stand mixer, cream together the softened butter and powdered sugar until smooth. Mix in the vanilla extract for a hint of warmth. Gradually add the flour mixture and mix on low speed until larger clumps form. Using a spatula or wooden spoon, gently fold in the chocolate chips and maraschino cherries. Shape the dough into a log, approximately 2 inches thick, and wrap it in plastic wrap. Chill in the fridge for 1-2 hours. Once chilled, preheat the oven to 325°F and line a baking sheet with parchment paper. Slice the dough into 1/4 to 1/3 inch thick rounds, pressing any crumbled pieces back together. Place the cookies on the baking sheet, leaving 1 inch of space between them. Bake for 18-20 minutes, rotating the pan halfway through. The cookies will turn golden on the bottom and set on top. Let them cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely. Enjoy these festive, buttery, and fruity treats with your loved ones!
