Ingredients
- 6 medium green bell peppers
- 1 lb ground beef
- 1 chopped onion
- 1 (6 7/8 ounce) box of Rice-a-Roni Spanish flavor
- 1 (16 ounces) can tomato sauce
- 1 teaspoon sugar
- 1 (14 1/2 ounce) can diced tomatoes
- 1 cup shredded cheddar cheese or American cheese
Preparation
Start by preheating your oven to 350°F. Remove the tops and seeds from the bell peppers, then parboil them for 5 minutes. Drain and place the peppers in a baking dish.
In a skillet, cook the ground beef and chopped onion until the beef is fully browned. Drain any excess fat and set aside.
Prepare the Rice-A-Roni according to the package instructions, using the can of diced tomatoes instead of water for added flavor. Once the rice is cooked, combine it with the beef and onion mixture.
Stuff each bell pepper with the rice and beef mixture. In a small bowl, mix the tomato sauce with 1 teaspoon of sugar and pour it around the peppers in the baking dish.
Cover the dish with aluminum foil and bake for 35 minutes. Uncover, sprinkle the shredded cheese on top, and bake for an additional 5 minutes until the cheese is melted and bubbly.
Serve these stuffed bell peppers hot, drizzled with the savory tomato sauce. Enjoy this easy, flavorful meal that’s perfect for any occasion!
