Ingredients:
- Mini phyllo shells – 30 pieces, thawed if frozen
- Light cream cheese – 8 oz (use 1/3 lower fat variety), at room temperature
- Fat-free plain Greek yogurt – ¼ cup
- Granulated sugar – 2 tbsp
- Fresh lemon juice – 2 tsp
- Lemon zest – 1 tsp, freshly grated (plus more for garnish)
- Vanilla extract – 1 tsp
- Strawberries – 5 medium, each sliced into 6 pieces
Preparation:
Preheat your oven to 350°F (177°C). Place the mini phyllo shells on a baking sheet and bake for 5 minutes until lightly toasted. Allow them to cool completely.
In a mixing bowl, combine the softened light cream cheese, fat-free Greek yogurt, granulated sugar, fresh lemon juice, lemon zest, and vanilla extract. Beat until the mixture is smooth and creamy.
Spoon the cream cheese mixture into a resealable plastic bag, snip off one corner, and pipe the filling evenly into the cooled phyllo shells. Alternatively, you can spoon the mixture directly into the shells. Top each bite with a slice of fresh strawberry and a sprinkle of lemon zest for a vibrant finish.
