Ingredients:
- 1/2 lb large shrimp (peeled and deveined)
- 3 beaten eggs
- 1/4 cup chopped onion
- 3 cups cold cooked white rice
- 1/4 cup frozen peas
- 1/4 cup chopped broccoli
- 1/4 cup sliced carrots
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 Tbsp sesame oil
- 1 tsp oyster sauce
- 2 Tbsp soy sauce (Substitute vegetables to your liking)
Preparation:
Season shrimp with salt and pepper, then set aside. You may use your favorite seafood seasoning for extra flavor. Heat a large wok or skillet over high heat and add sesame oil. Cook shrimp for 1 minute on each side, then remove from the dish.
In the same skillet, add the beaten eggs and cook briefly until soft, using a wooden spatula to scramble. Slide the eggs to the side of the skillet. Add a small amount of oil if needed, then toss in the chopped onion, carrots, and broccoli. Cook for 2-3 minutes until the vegetables are slightly tender.
Add the cold cooked rice, oyster sauce, and soy sauce to the skillet. Stir-fry everything together until well combined and heated through. Return the cooked shrimp to the skillet and mix gently. Serve hot and enjoy this quick, flavorful, and healthy shrimp fried rice!
