Ingredients:
For the Bread:
- 3/4 cup (190 ml) granulated sugar
- 1/2 cup (125 ml) whole milk
- 1/2 cup (125 ml) vegetable oil
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups (250g) fresh diced strawberries
- 2 tablespoons all-purpose flour (for coating strawberries)
For the Icing (Optional):
- 1 cup (125g) powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Preparation:
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. In a large mixing bowl, whisk together sugar, milk, oil, egg, and vanilla extract until smooth. In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. In a small bowl, toss diced strawberries with 2 tablespoons of flour to prevent sinking. Gently fold the strawberries into the batter. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. For the icing, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bread. Slice and serve!
