Ingredients:

  • 1/2 cup (125 ml) whole milk
  • 1/2 cup (125 ml) vegetable oil
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups (250g) fresh diced strawberries
  • 2 tablespoons all-purpose flour (for coating strawberries)

For the Icing (Optional):

  • 1 cup (125g) powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Preparation:

Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. In a large mixing bowl, whisk together sugar, milk, oil, egg, and vanilla extract until smooth. In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
