Ingredients:
- 1 large egg
- 125 ml (½ cup) milk
- 125 ml (½ cup) vegetable oil
- 2 tablespoons water
- 1 teaspoon salt
- 300g fresh spinach, cooked and drained
- 200g feta cheese, crumbled
- Freshly ground black pepper, to taste
- 3 rolls of filo dough (phyllo pastry)
- 1 tablespoon poppy seeds
- 1 egg yolk (for brushing)
Preparation:
Preheat your oven to 180°C (356°F) and prepare a baking sheet with parchment paper. In a large bowl, whisk together 1 egg, milk, vegetable oil, water, and salt until well combined. Lay out one sheet of filo dough and brush it generously with the egg mixture. Repeat with two more sheets, stacking them on top of each other. In another bowl, mix the cooked spinach, crumbled feta cheese, and a pinch of black pepper. Spread the spinach and feta mixture evenly over the filo dough layers. Carefully roll the filo dough from one end to the other, forming a long strip. Cut the strip into triangles and place them on the prepared baking sheet. Brush each triangle with egg yolk and sprinkle with poppy seeds. Bake for 15-20 minutes or until golden brown and crispy. Serve warm and enjoy this flaky, cheesy, spinach-filled Greek delight!
