Ingredients:

  • 1 lb fresh salmon filet
  • 3 Tbsp Olive oil, divided
  • 1 1/2 tsp Garlic salt (Lawry’s Brand recommended), or to taste
  • 1/2 tsp Black pepper, or to taste
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 1/2 red bell pepper, seeded and diced
  • 3 Tbsp unsalted butter, divided
  • 1 cup Panko bread crumbs
  • 2 large eggs, lightly beaten
  • 3 Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1/4 cup parsley, finely minced

Preparation:

Preheat your oven to 425°F. Line a rimmed baking sheet with parchment paper or a silicone liner. Place the salmon filet in the center, skin-side-down. Drizzle with 1 Tbsp olive oil and season generously with garlic salt and black pepper. Bake uncovered for 10-15 minutes (depending on thickness), or until just cooked through. Remove from the oven, cover with foil, and let it rest for 10 minutes. Flake the salmon with two forks, discarding the skin and any bones. Set aside to cool to room temperature.

Heat a medium skillet over medium heat with 1 Tbsp olive oil and 1 Tbsp butter. Add the diced onion and red bell pepper, sautéing until golden and softened (about 7-9 minutes). Remove from heat and set aside.

In a large mixing bowl, combine the flaked salmon, sautéed onions and peppers, Panko bread crumbs, beaten eggs, mayonnaise, Worcestershire sauce, 1 tsp garlic salt, 1/4 tsp black pepper, and minced parsley. Stir until well combined. Form the mixture into patties, using about a heaping tablespoonful for each. Mold them with your hands into 2” wide by 1/3 to 1/2” thick patties.

In a clean non-stick pan, heat 1 Tbsp olive oil and 1 Tbsp butter until hot. Add the salmon patties in a single layer and sauté for 3-4 minutes per side, or until golden brown and cooked through. If the patties brown too quickly, reduce the heat. Transfer the cooked patties to a paper-towel-lined plate and repeat with the remaining mixture.

Serve these crispy salmon patties hot with your favorite dipping sauce or as a main dish alongside a fresh salad. Enjoy!
