Ingredients:
- 4 apples, peeled, cored, and cut into wedges
- 60 ml (1/4 cup) butter
- 60 ml (1/4 cup) firmly packed brown sugar
- 4 medium Old El Paso™ flour tortillas (6-inch [15 cm])
- Cooking spray
- Vanilla ice cream
- 60 ml (1/4 cup) warmed caramel sauce
Preparation:
1. Preheat your oven to 230°C (450°F). Lightly spray a 20 or 23 cm (8 or 9 inch) baking dish with cooking spray.
2. In a 25 cm (10 in.) skillet, melt the butter over medium heat. Add the apple wedges and sauté for 5 to 7 minutes, or until they become tender. Stir in the brown sugar and cook until it dissolves, creating a rich, caramelized coating on the apples.
3. Spoon a generous quarter of the sautéed apples onto each flour tortilla. Roll them up tightly and place them seam-side down in the prepared baking dish. Lightly spray the tops of the enchiladas with cooking spray to help them brown evenly.
4. Bake for 10 to 15 minutes, or until the tortillas are golden brown and crispy.
5. Serve these delightful Apple Pie Enchiladas warm, topped with a scoop of creamy vanilla ice cream and drizzled with warmed caramel sauce for an irresistible dessert experience.
