Oatmeal Cookie Crust
- 1 cup all-purpose flour
- 1 cup rolled oats
- 3/4 cup brown sugar
- 12 Tablespoons butter, softened
Homemade Apple Filling
- 2 Tablespoons butter
- 3-4 medium apples, peeled, cored, and diced into 1/4-inch cubes
- 1/3 cup brown sugar
- 3 Tablespoons water
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 Tablespoon + 1 teaspoon cornstarch
- 2 Tablespoons water
Canned Apple Filling Option
- 1 can apple pie filling
- Caramel topping (optional)
Preparation:
- Preheat oven to 350°F. Grease a 24-cup mini-muffin tin.
- For homemade filling: In a medium pan, melt 2 Tablespoons butter. Add diced apples, 1/3 cup brown sugar, 3 Tablespoons water, cinnamon, and nutmeg. Cook over medium-high heat for 4-6 minutes until apples soften slightly.
- Combine 1 Tablespoon + 1 teaspoon cornstarch with 2 Tablespoons water. Stir into the apple mixture and cook for 4-5 minutes until thickened. Cool.
- In a large bowl, mix flour, oats, and 3/4 cup brown sugar. Cut in 12 Tablespoons softened butter until crumbly.
- Press a heaping tablespoon of crust mixture into each mini muffin cup, forming a cup shape.
- Fill each cup with 1 tablespoon of apple filling. Sprinkle with remaining crust mixture.
- Bake for 15-20 minutes until golden brown. Cool in the pan for 10 minutes, then remove with a knife. Drizzle with caramel if desired.
