Ingredients
For Preparing the Dishes:
- 1 teaspoon butter
- 1 teaspoon cocoa powder
For the Cakes:
- 115g dark chocolate
- 115g butter
- 55g caster sugar
- 2 whole medium eggs
- 2 egg yolks
- 1 teaspoon instant coffee dissolved in 1 tablespoon of water
- 1 teaspoon vanilla extract
- 80g plain flour
- 1 tablespoon cocoa powder
- Whipped cream & cocoa powder to serve
Preparation
Preheat your oven to 200°C/400°F/Gas Mark 6 (or 180°C for a fan oven). Prepare your ramekins by greasing them with butter and dusting with cocoa powder, ensuring every inch is coated for easy removal.
In a heatproof bowl, melt the dark chocolate and butter together over a saucepan of simmering water, ensuring the bowl doesn’t touch the water. Stir until smooth and set aside.
In a separate bowl, whisk the sugar, eggs, and egg yolks until the mixture becomes light and fluffy. Add the dissolved instant coffee and vanilla extract, mixing well to combine.
Gradually pour the melted chocolate and butter mixture into the egg mixture, whisking continuously to avoid cooking the eggs. Sift in the flour and cocoa powder, folding gently until just combined.
Divide the batter evenly among the prepared ramekins and bake for 12-14 minutes. The cakes are ready when the tops are set but the centers remain gooey. Let them rest for a minute before serving.
Serve warm, topped with a dollop of whipped cream and a dusting of cocoa powder. Watch as your guests delight in the molten chocolate center with every spoonful!
Enjoy this decadent treat and make every moment unforgettable!
