Bottom Crust
- 22 Golden Oreos, Crushed
- 5 Tbsp Melted Butter
Filling
- 4 (8oz) Packages Cream Cheese, Softened
- 1 2/3 Cups Granulated Sugar
- 1/4 Cup Cornstarch
- 1 Tbsp Pure Vanilla Extract
- 2 Large Eggs
- 3/4 Cup Heavy Whipping Cream
- 1 Jar Smucker’s Strawberry Ice Cream Topping
Topping
- 12 Golden Oreos, Crushed & Divided
- 1 1/2 Tsp Softened Butter
- 3 Tbsp Strawberry Gelatin Powder
Preparation
Preheat your oven to 350°F (175°C). Line the outer border of a 9-inch springform pan with foil and grease the interior to prevent sticking. In a bowl, combine crushed Golden Oreos with melted butter, then press the mixture firmly into the bottom of the pan to form the crust.
For the filling, beat one 8oz package of cream cheese with 1/3 cup sugar and cornstarch until smooth. Add the remaining cream cheese, one package at a time, beating well after each addition. Increase speed and mix in the remaining sugar and vanilla extract. Blend in eggs one at a time, followed by the heavy whipping cream. Avoid overmixing.
Spoon half of the cream cheese filling over the crust. Drizzle half of the strawberry topping over the filling and use a knife to create a marbled effect. Repeat with the remaining filling and strawberry topping. Bake for 1 hour or until the center has a slight wobble. Allow to cool completely before refrigerating for at least 4 hours.
For the topping, divide crushed Oreos into two bowls. Mix one bowl with softened butter and set aside. In the second bowl, combine Oreos with strawberry gelatin powder, adding more butter if needed to help the mixture stick. Sprinkle both toppings over the chilled cheesecake before serving.
