Ingredients

  • 1 liter whole milk
  • 4 tbsp all-purpose flour
  • 4 tbsp potato or corn starch
  • 1.5 cups powdered sugar
  • 2 large eggs
  • 100 g unsalted butter
  • 1 packet vanilla sugar
  • 400 ml whipped cream

For the Glaze:

  • 200 ml whipped cream
  • 100 g milk chocolate

Preparation

Start by preparing the dough. In a large mixing bowl, beat the eggs and powdered sugar until light and foamy. Gradually add the sifted flour, cocoa powder, and baking powder, mixing until smooth. Spread the batter evenly on a baking sheet lined with parchment paper. The thinner the layer, the crispier the wafers. Bake in a preheated oven at 180°C (350°F) for 20 minutes. Allow to cool completely on a wire rack.

Next, prepare the cream. In a saucepan, combine milk, flour, starch, powdered sugar, and eggs. Cook over medium heat, stirring constantly, until the mixture thickens into a pudding-like consistency. Remove from heat and stir in the butter and vanilla sugar until fully incorporated. Blend with a hand mixer for a smooth texture. Let the cream cool to room temperature.

In a separate bowl, whip 400 ml of cream until stiff peaks form. Gently fold the whipped cream into the cooled pudding mixture using a whisk. Divide the cream into two portions. Spread one portion over the baked wafer sheet, sprinkle with crumbled wafer edges, and top with the remaining cream. Smooth the surface and refrigerate until set.

For the glaze, heat 200 ml of whipped cream in a saucepan. Add the milk chocolate and stir until completely melted and smooth. Pour the glaze over the chilled wafer cake, spreading evenly. Refrigerate until the glaze sets. Slice and serve this decadent dessert to impress your guests!
