For the Chocolate Fudge Icing:

  • 50g butter
  • 3 tbsp milk
  • 250g icing sugar, sifted
  • 2 tbsp cocoa powder, sifted

Preparation

Preheat your oven to 160°C (fan). Start by melting the dark chocolate with 4 tablespoons of milk in a pan over low heat, stirring until smooth. Add the remaining milk and set aside.

In a mixing bowl, beat the butter and light brown sugar until light and fluffy. Add the egg yolks one at a time, mixing well after each addition. Incorporate the sifted self-raising flour and baking powder, alternating with 3/4 of the melted chocolate milk. Mix until smooth, then fold in the remaining chocolate milk.

In a separate bowl, whisk the egg whites until stiff peaks form. Gently fold 1 tablespoon of the egg whites into the cake batter to lighten it, then carefully fold in the rest.

Divide the batter evenly between two greased and lined 8-inch cake tins. Bake for 35-38 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the tins for a few minutes before transferring them to a wire rack to cool completely.

For the chocolate fudge icing, melt the butter and milk in a small saucepan. Stir in the sifted icing sugar and cocoa powder until smooth and glossy. Allow the icing to cool slightly, stirring occasionally to prevent a skin from forming.

Use one-third of the icing to sandwich the two cake layers together. Warm the remaining icing slightly to thin it, then pour it over the top of the cake, allowing it to drizzle down the sides. Decorate with chocolate flakes, chips, or crushed nuts for an extra touch of decadence.
