Ingredients:
- 2 large potatoes, russet or Yukon Gold preferred
- 100g cheddar cheese (or any melting cheese), cut into small cubes
- 50g all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- Vegetable oil for frying
- Salt and pepper to taste
Preparation:
Step 1: Preheat your oven to 180°C (350°F). Bake the potatoes for 1–1 ½ hours until tender. Once cooled, scoop out the flesh, mash until smooth, and season with salt and pepper. Shape the mashed potatoes around each cheese cube to form sausage-like croquettes.
Step 2: Set up a breading station: place flour on a plate, beaten eggs in a bowl, and breadcrumbs in another bowl. Roll each croquette in flour, dip in egg, and coat evenly in breadcrumbs. Chill in the fridge for 1 hour to firm up (optional but recommended).
Step 3: Heat vegetable oil in a deep saucepan to 180–185°C (350–365°F). Fry the croquettes in batches for 2–3 minutes until golden and crispy. Drain on paper towels and serve hot. Store leftovers in the fridge for up to 2 days.
