- Unsalted sweet cream butter – 2 tablespoons
- Potatoes – 1 lb (Idaho Russet or Red potatoes)
- Salted water – 4 cups with 2 tablespoons of salt
- Sweet onion – ½ medium-sized (Vidalia preferred)
- Salt and pepper – To taste
- Garnish – Paprika and fresh basil
Preparation
- Heat a heavy 9-inch cast iron skillet over medium heat.
