Ingredients:

  • °30 ml (2 tbsp.) canola oil
  • °2 onions, finely chopped
  • °3 celery stalks, diced
  • °1 L (4 cups) chicken broth
  • °1 L (4 cups) whole milk
  • °375 g (3/4 lb.) smoked ham, cubed
  • °1 bay leaf
  • °1 sprig fresh thyme
  • °Salt and pepper, to taste
  • °375 ml (1 1/2 cups) potatoes, diced
  • °250 ml (1 cup) sweet potatoes, diced
  • °250 ml (1 cup) corn kernels (fresh or frozen)

Instructions:

In a large soup pot, heat the canola oil over medium heat. Add the chopped onions and diced celery, sautéing until softened and translucent, about 5 minutes. Pour in the chicken broth and milk, stirring to combine. Add the cubed smoked ham, bay leaf, and thyme sprig. Season with salt and pepper. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 30 minutes to allow the flavors to meld.

After 30 minutes, add the diced potatoes, sweet potatoes, and corn kernels to the pot. Continue to simmer until the vegetables are tender and the ham is easily shredded, about 20-25 minutes. Remove the bay leaf and thyme sprig. For a richer texture, use an immersion blender to lightly blend a portion of the soup. Alternatively, leave it as is for a heartier chowder. Taste and adjust seasoning if needed.

Once the ham has cooled slightly, remove it from the pot, shred it into bite-sized pieces, and return it to the soup. Ladle the creamy smoked ham, potato, and corn chowder into bowls and serve hot. Garnish with fresh thyme or a drizzle of cream for an extra touch of indulgence. This comforting chowder is perfect for cozy evenings and family gatherings, offering a delightful blend of smoky, sweet, and savory flavors.

Enjoy this hearty and satisfying meal that’s sure to warm you from the inside out!
