  • ½ cup (125g) butter, room temperature
  • ⅔ cup (75g) granulated sugar
  • 2 eggs
  • 1 ½ teaspoon (7.5 ml) pure vanilla extract
  • 1 ½ cups (172.5g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • ½ cup (125 mL) + 1 tbsp (15 mL) milk, divided
  • ½ cup (75g) powdered sugar

Preparation

Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.

In a small bowl, mix ⅓ cup brown sugar with 1 teaspoon cinnamon. In another bowl, toss the diced apples with the remaining 1 teaspoon cinnamon and set aside.

In a large bowl, cream together ½ cup butter and ⅔ cup granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in 1 ½ teaspoon vanilla extract.
