- 600g potatoes – peeled, washed, and diced into bite-sized cubes
- 400g smoked sausage – sliced into rounds
- 1 onion – finely chopped
- 2 cloves garlic – minced
- 200g cheddar cheese – grated (divided into two portions)
- 4 eggs – whisked
- 20 cl semi-thick cream – for a rich, creamy texture
- Salt & Pepper – to taste
- 30g butter – for sautéing
Preparation:
Start by preparing the potatoes. Peel, wash, and dice them into bite-sized cubes. Boil them in salted water for 10 minutes until slightly tender. While the potatoes cook, slice the smoked sausage into rounds and brown them in a dry skillet for 10 minutes. In the same skillet, melt the butter and sauté the finely chopped onion and minced garlic for 5 minutes until fragrant. Add the cooked potatoes and browned sausage to the skillet, stirring to combine.
Preheat your oven to 180°C (350°F). In a bowl, whisk together the eggs, cream, salt, and pepper until well combined. Pour this mixture over the potato and sausage mixture in the skillet. Sprinkle half of the grated cheddar cheese on top. Cover the skillet and bake for 20 minutes. After 20 minutes, remove the cover, add the remaining cheese, and bake for an additional 15 minutes until the cheese is melted and bubbly.
