Ingredients:
- 1/2 cup unsalted butter, softened
- 1 (8 oz.) package cream cheese, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 white cake mix
- ½ cup sprinkles, divided
- ½ cup confectioner’s sugar
Instructions:
- Step 1: In a large mixing bowl, cream together the softened butter and cream cheese until smooth. Add the egg and vanilla extract, beating just until combined. Gradually mix in the white cake mix until the dough is well blended. Stir in ¼ cup of the sprinkles. Cover the dough and refrigerate for at least one hour or overnight for best results.
- Step 2: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it. Scoop out rounded tablespoons of the chilled dough and roll them into 1-inch balls. Sprinkle each ball with the remaining sprinkles, then roll them in confectioner’s sugar until fully coated. Place the cookies about 2 inches apart on the prepared baking sheet.
- Step 3: Bake the cookies for 8 to 10 minutes, or until the edges are just starting to turn golden. Allow them to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely. Enjoy these gooey, buttery, and festive cookies with a glass of milk or a cup of hot cocoa!
