Ingredients:
WONTONS
- 8 ounces ground pork
- 1 tablespoon rice wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon fresh ginger, grated
- 1 teaspoon brown sugar
- 2 green onions, finely chopped
- 24 square (3½ inches each) wonton wrappers
SOUP
- 6 cups (1,440g) chicken broth
- 1½ teaspoons garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2-3 green onions, finely chopped
Preparation:
WONTONS
- In a large bowl, combine ground pork, rice wine vinegar, soy sauce, sesame oil, grated ginger, brown sugar, and finely chopped green onions. Mix until well combined.
- Place 1 heaping teaspoon of the filling into the center of each wonton wrapper.
- Moisten the edges of the wrapper with water, then fold the corners together to form a triangle, pressing out any excess air.
- Slightly lift the long edge of the triangle and wrap the edges in opposite directions, pressing firmly to seal. Use your finger to create a space and wet the edges as needed.
- Repeat with the remaining wrappers and filling. Let the wontons rest while preparing the soup.
SOUP
- In a medium pot over medium heat, combine chicken broth, minced garlic, soy sauce, sesame oil, and finely chopped green onions. Bring to a gentle simmer.
- In a separate large pot, bring 4 quarts of water to a boil. Add the prepared wontons and cook for 5 minutes until they float to the top.
- Strain the cooked wontons and add them to the warm broth mixture. Serve immediately, garnished with extra green onions if desired.
