  • 680 g (4 cups) peeled and cubed red potatoes

  • 375 ml (1 1/2 cups) milk
  • 2.5 ml (1/2 tsp) black pepper
  • 2 pinches ground caraway seeds (optional)

  • 225 g bacon, cut into lardons
  • 100 g (1 cup) grated sharp Gouda cheese
  • 12 thin bread croutons
  • 50 g (1/2 cup) grated yellow or white cheddar cheese
  • 30 ml (2 tbsp.) chopped chives

Preparation

Soup

  1. In a large saucepan over medium heat, soften the onions and garlic in butter until lightly browned.
  2. Add the leek and cook for 2 minutes.
