Ingredients

  • 8 ounces uncooked fettuccine
  • 2 chicken breasts, cut into 1″ pieces
  • 1/2 pound shrimp (31/40 size), thawed & peeled
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Cajun seasoning (low or no salt)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup heavy/whipping cream
  • 4 ounces cream cheese (1/2 block of Philly)
  • 2 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • Salt & pepper to taste

Preparation

Start by taking the cream cheese out of the fridge 30 minutes before cooking or microwave it for 20-30 seconds to soften. Boil a salted pot of water and cook the fettuccine al dente according to package instructions. Thaw the shrimp under cool running water and pat them dry. Cut the chicken into 1″ pieces and season both the shrimp and chicken with garlic powder and 1/2 tablespoon of Cajun seasoning.

Heat olive oil in a deep skillet over medium-high heat. Cook the shrimp for 3 minutes, flipping once, then transfer to a plate. Add the chicken to the skillet and cook for 5-6 minutes until fully cooked, stirring occasionally. Set aside with the shrimp.

In the same skillet, melt butter and add heavy cream, cream cheese, the remaining 1/2 tablespoon of Cajun seasoning, and minced garlic. Stir until the cream cheese dissolves, then let the sauce simmer for 2-3 minutes until slightly thickened. Stir in the Parmesan cheese and return the shrimp and chicken to the pan to warm through. Season with salt and pepper to taste.

For a smoother sauce, add a splash of pasta water before draining the fettuccine. Toss the pasta with the sauce and serve immediately. Garnish with extra Parmesan, chopped parsley, or a squeeze of lemon for a fresh touch. Enjoy this creamy, spicy, and cheesy masterpiece!
