Ingredients:
- 1 1/2 pounds boneless skinless chicken breasts
- 1 large onion, peeled and chopped

Preparation:
Start by setting a large 6-8 quart pot over medium heat. Add the olive oil, followed by the chopped onions and minced garlic. Sauté for 5-6 minutes until the onions are translucent and fragrant. Next, add the whole raw chicken breasts, Old El Paso Chopped Green Chiles, fire-roasted crushed tomatoes, chicken stock, ground cumin, crushed red pepper, turmeric, sliced carrots, and 1 1/2 teaspoons of sea salt. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the chicken is fully cooked.
Once the chicken is cooked, remove it from the pot using tongs and place it on a cutting board to cool. Add the chopped cabbage and broccoli florets to the pot and continue simmering until the vegetables are tender. While the vegetables cook, shred the chicken using two forks and return it to the pot.
