- 1 tsp salt
For the Pasta:
- 12 ounces spaghetti
For the White Wine Parmesan Sauce:
- 1 small yellow onion (or ½ onion), finely chopped
- 4 tbsp unsalted butter
- 2 scallions, chopped
- 4 garlic cloves, minced
- 1 tbsp all-purpose flour
- 1 c. dry white wine
- 1 c. heavy cream
- 1 tsp Italian seasoning
- 2 small tomatoes, diced
- ¼ tsp crushed red pepper flakes
- ½ c. freshly shredded Parmesan cheese
- ½ tsp salt, plus more to taste
Preparation
Step 1: Slice the chicken breasts horizontally into thin cutlets. Pat them dry with paper towels to ensure a crispy sear.
Step 2: In a large bowl, combine flour, salt, black pepper, garlic powder, and Italian seasoning. Dredge the chicken cutlets in the flour mixture, pressing gently to coat both sides. Set aside.
