Ingredients

For the Chicken:

  • 2 tbsp olive oil
  • 4 boneless skinless chicken breasts (halved horizontally and patted dry with paper towels)
  • ½ c. all-purpose flour
  • ¼ tsp freshly ground black pepper
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp salt

For the Pasta:

  • 12 ounces spaghetti

For the White Wine Parmesan Sauce:

  • 1 small yellow onion (or ½ onion), finely chopped
  • 4 tbsp unsalted butter
  • 2 scallions, chopped
  • 4 garlic cloves, minced
  • 1 tbsp all-purpose flour
  • 1 c. dry white wine
  • 1 c. heavy cream
  • 1 tsp Italian seasoning
  • 2 small tomatoes, diced
  • ¼ tsp crushed red pepper flakes
  • ½ c. freshly shredded Parmesan cheese
  • ½ tsp salt, plus more to taste

Preparation

Step 1: Slice the chicken breasts horizontally into thin cutlets. Pat them dry with paper towels to ensure a crispy sear.

Step 2: In a large bowl, combine flour, salt, black pepper, garlic powder, and Italian seasoning. Dredge the chicken cutlets in the flour mixture, pressing gently to coat both sides. Set aside.

Step 3: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Once hot, add the coated chicken and sear for 4-5 minutes per side, or until golden brown and fully cooked. Transfer the chicken to a plate and set aside.

Step 4: In the same skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 2 minutes. Stir in the scallions and tomatoes, then sprinkle with 1 tbsp flour and cook for 1 minute.

Step 5: Pour in the white wine, scraping any browned bits from the bottom of the skillet. Add the heavy cream, Italian seasoning, salt, and red pepper flakes. Bring to a simmer, then stir in the Parmesan cheese until the sauce is smooth and creamy.

Step 6: Cook the spaghetti in a large pot of salted boiling water until al dente according to package instructions. Drain, but do not rinse.

Step 7: Add the cooked spaghetti to the skillet with the sauce, tossing to coat. Cook over low heat for 2-4 minutes, adjusting salt if needed. Nestle the chicken cutlets into the pasta and simmer for an additional 5 minutes.

Step 8: Serve the creamy Italian chicken pasta with extra Parmesan cheese on top. Enjoy this hearty, flavorful dish with family and friends!
