- 3 cups brown potatoes, thinly sliced
- 3/4 cup shredded Pepper Jack cheese
- 1 cup cooked pork, diced

- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish.
- Evenly layer the brown potatoes in the bottom of the prepared dish.
- Sprinkle the Pepper Jack cheese, diced pork, and chopped green onions over the potatoes.
- In a bowl, whisk together the scrambled eggs, evaporated milk, black pepper, and salt until well combined.
- Pour the egg mixture evenly over the potato and cheese layers.
