Ingredients:
For The Batter:
- 1 cup butter, softened
- 2 cups sugar
- 2 large eggs
- 2 cups buttermilk (or 2 cups milk + 2 tablespoons vinegar/lemon juice)
- 4 cups flour
- 2 teaspoons baking soda
For The Cinnamon/Sugar Mixture:
Preparation:
Cream together the softened butter, 2 cups of sugar, and eggs until light and fluffy. Gradually add the buttermilk (or milk with vinegar/lemon juice), flour, and baking soda, mixing until smooth. Divide half of the batter (or slightly less) into two greased loaf pans. In a separate bowl, mix the 2/3 cup sugar and cinnamon. Sprinkle 3/4 of the cinnamon-sugar mixture over the batter in each pan. Add the remaining batter and top with the leftover cinnamon-sugar mixture. Use a knife to gently swirl the layers. Bake at 350°F (175°C) for 45-50 minutes or until a toothpick comes out clean. Let the bread cool in the pans for 20 minutes before transferring to a wire rack. Makes 2 delicious loaves perfect for breakfast or snacking!
