Crispy Herb-Infused Fried Potato Squares: A Perfect Side Dish or Snack
Ingredients:
- 4 large potatoes
- 2 cups fresh chopped parsley
- 1 tablespoon chicken broth or chopped green onions
- 2 tablespoons cornstarch
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- Oil for frying
Preparation:
Prepare the potatoes: Peel and finely shred the potatoes using a grater or food processor. Place the shredded potatoes in a clean kitchen towel or paper towels and squeeze out as much moisture as possible.
Mix the ingredients: In a large bowl, combine the shredded potatoes, chopped parsley, green onions (or chives), cornstarch, salt, and pepper. Mix thoroughly until all ingredients are evenly distributed.
Form the squares: Spread the potato mixture on a flat surface or large plate, pressing it into an even layer about 1/4 inch thick. Cut the mixture into small squares, approximately 1 inch on each side.
Fry the squares: Heat oil in a skillet or deep fryer to 350°F (175°C). Fry the potato squares in batches for 2-3 minutes per side, or until golden brown and crispy. Remove the fried squares and place them on a paper towel-lined plate to drain excess oil.
Serve and enjoy: Serve the warm, crispy potato squares as a side dish or snack. Pair them with your favorite dipping sauce or enjoy them on their own. These herb-infused treats are sure to be a crowd-pleaser!
