Ingredients

For the Flautas

  • 3 ½ cups shredded chicken
  • 20 corn tortillas (see notes)
  • Vegetable oil for frying

For the Salsa Verde

  • 1 lb tomatillos (quartered)
  • 3 jalapeno or serrano chilies (seeded and cut into chunks)
  • 1 medium onion (quartered)
  • 1 small bunch cilantro
  • 2 garlic cloves (peeled)
  • 1 Tbsp powdered chicken bouillon
  • 2 Tbsp vegetable oil
  • Salt (to taste)

For the Toppings

  • Shredded lettuce
  • Chopped onions
  • Mexican cream or sour cream (as needed)
  • Queso fresco (or any cheese you prefer)

Preparation

Make the Salsa Verde

  1. Place tomatillos, onion, and chilies in a saucepan. Add water to slightly cover and simmer for 10 minutes until cooked.
  2. Blend all ingredients with 1 cup of cooking water, garlic, and cilantro until smooth.
  3. Heat oil in a saucepan, pour in the tomatillo sauce, and season with chicken bouillon, pepper, and salt.
  4. Simmer for 5 minutes until thickened, adjust seasonings, and let cool to room temperature.

Make the Flautas

  1. Heat tortillas on a pan until soft. Fill with shredded chicken, roll tightly, and secure with a toothpick.
  2. Fry in batches in 1 ½ cups of hot oil until crispy and golden. Drain on a paper towel or cooling rack.

Assemble

  1. Add salsa to serving cups, place 3-4 flautas in the sauce, and top with lettuce, onions, cream, and cheese.
  2. Drizzle extra salsa and serve immediately.

Notes

  • Flour tortillas can be used but fry faster and may burn easily.
  • Serve on plates by layering salsa, flautas, and toppings for a delicious alternative.

Enjoy this authentic Mexican dish that’s bursting with flavor and texture!
