Ingredients

For the Soup:

  • 4 tablespoons butter
  • 2/3 cup finely sliced onion
  • 2–3 carrots, chopped
  • 3 stalks celery, chopped
  • 1/3 cup minced garlic
  • 8 ounces chicken stock
  • 2 pounds shredded cooked chicken
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bay leaves
  • 1 tablespoon dried parsley
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

For the Dumplings:

  • 1.5 cups all-purpose flour
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons chilled butter
  • 3/4 cup milk

Preparation

Start by melting 4 tablespoons of butter in a large 8-quart saucepan over medium heat. Add the finely sliced onion, chopped carrots, and chopped celery, stirring occasionally until the onion becomes translucent. Cook for an additional 30 seconds after adding the minced garlic.

Next, stir in the shredded cooked chicken and chicken stock. Season with salt, black pepper, bay leaves, and dried parsley. Bring the mixture to a boil, then reduce the heat and let it simmer while you prepare the dumplings.

For the dumplings, combine 1.5 cups of flour, baking soda, and salt in a large bowl. Cut in 3 tablespoons of chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in 3/4 cup of milk until a dough forms. Knead the dough gently a few times in the bowl.

Roll the dough into small, inch-sized pieces and drop them into the simmering soup. Cover and let it simmer for 15–20 minutes, or until the dumplings float to the surface and are cooked through.

To thicken the soup, mix 3 tablespoons of cornstarch with 3 tablespoons of cold water until smooth. Stir this mixture into the soup and continue stirring until it thickens. Serve hot and enjoy this heartwarming chicken and dumplings soup!
