Ingredients:

  • 1 tsp baking powder
  • 2 cups grated carrots
  • 1 cup diced apples
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour (or additional all-purpose flour)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup vegetable oil (or melted butter)
  • 1/2 cup honey or maple syrup (or 3/4 cup sugar)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk or orange juice (for added moisture)

Preparation:

Preheat your oven to 350°F (175°C) and grease an 8-inch cake pan. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, mix vegetable oil (or melted butter), honey or maple syrup, eggs, and vanilla extract until smooth. Combine wet and dry ingredients, adding milk or orange juice if needed.
