Ingredients
- °30 ml (2 tbsp.) canola oil
- °2 chopped onions
- °3 celery stalks
- °1 L (4 cups) chicken broth
- °1 L (4 cups) milk
- °1 Toupie smoked ham, 375 g (3/4 lb.)
- °1 bay leaf
- °1 sprig thyme
- °Salt and pepper to taste
- °375 ml (1 1/2 cups) diced potatoes
- °250 ml (1 cup) diced sweet potatoes
- °250 ml (1 cup) corn kernels, fresh or frozen
Preparation
In a large pan, heat the canola oil over medium heat. Sauté the chopped onions and celery until they become translucent, about 5 minutes. Pour in the chicken broth and milk, stirring to combine. Add the smoked ham, bay leaf, and thyme sprig, then bring the mixture to a gentle boil. Reduce the heat to low, cover, and simmer for 30 minutes to allow the flavors to meld. Next, add the diced potatoes, sweet potatoes, and corn kernels. Continue cooking until the vegetables are tender and the ham is easy to shred, approximately 20-25 minutes. Remove the ham from the pan and let it cool slightly. Slice it into thin strips and return it to the soup. Season with salt and pepper to taste. Serve hot and enjoy the creamy, smoky goodness!
