- 4 eggs
- 100 g of flour
- 140 g of starch (divided into 100 g for the cake and 40 g for the cream)
- 1 packet of dry yeast
- 50 g of margarine
- 1350 g of sugar (170 g for the cake, rest for the cream)
- 2 glasses of milk (1 for the cake, 1 for the cream)
- 2 oranges (zest and juice for the cake)
- 4 oranges (for the cream)
Preparation
Start by preheating your oven to 180°C (350°F). In a large mixing bowl, beat the egg yolks with 170 g of sugar and the zest of two oranges until light and creamy. Add the juice of one orange and mix well. In a separate bowl, combine the flour and 100 g of starch, then gradually fold this mixture into the egg yolk batter. Dissolve the packet of dry yeast in one glass of milk and incorporate it into the batter. In a clean bowl, whisk the egg whites until stiff peaks form, then gently fold them into the batter to maintain airiness. Pour the batter into a buttered and floured 24 cm cake pan and bake for 35-40 minutes. Once done, slightly open the oven door and let the cake sit for a few minutes before removing it. Allow it to cool completely before adding the orange cream.
For the orange cream, mix the remaining sugar, 40 g of starch, one glass of milk, and the juice of four oranges in a saucepan. Cook over medium heat, stirring constantly, until thickened.
