In a deep skillet, heat 2 Tbsp of bacon grease (or butter) over medium heat. Add the diced onion and green bell pepper, sautéing for about 5 minutes until softened. Stir in the remaining ingredients: pork and beans, ketchup, molasses, brown sugar, cider vinegar, and dry mustard. Let the mixture simmer for a minute to blend flavors. Grease a 13×9 baking dish, pour in the bean mixture, and top with the partially cooked bacon. Bake for 2-3 hours, adjusting time for your desired consistency. Let stand for 5 minutes before serving.
