- 2 tbsp extra virgin olive oil
- 7 oz andouille sausages or chorizo, thinly sliced
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 1 medium red bell pepper, chopped
- 1 ½ tsp Cajun seasoning (store-bought or homemade)
- 2 cups cooked and cooled rice
- 12 oz cooked and peeled shrimp or prawns (about 20-24)
- Sea salt to taste
- 3 green onions, sliced
- 1 tbsp cilantro, roughly chopped (optional)
Preparation:
- Step 1: Heat 1 tablespoon oil in a large skillet. Add sliced sausage and cook until browned, stirring occasionally. Remove and set aside in a bowl, keeping warm.
