This Cajun Shrimp Fried Rice is a flavor-packed, one-pot meal that brings the bold, spicy flavors of Louisiana to your table in just 30 minutes. Perfect for weeknight dinners or as a crowd-pleasing dish at dinner parties, this recipe is a creative way to use leftover rice and combines juicy shrimp, smoky sausage, and vibrant veggies for a wholesome and satisfying meal.

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 7 oz andouille sausages or chorizo, thinly sliced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 ½ tsp Cajun seasoning (store-bought or homemade)
  • 2 cups cooked and cooled rice
  • 12 oz cooked and peeled shrimp or prawns (about 20-24)
  • Sea salt to taste
  • 3 green onions, sliced
  • 1 tbsp cilantro, roughly chopped (optional)

Preparation:

  1. Step 1: Heat 1 tablespoon oil in a large skillet. Add sliced sausage and cook until browned, stirring occasionally. Remove and set aside in a bowl, keeping warm.
  2. Step 2: Add shrimp to the skillet and cook for 1 minute without stirring, then flip and cook for another 30 seconds to 1 minute. Transfer to the bowl with the sausage.
  3. Step 3: If needed, add more oil to the skillet. Cook celery, onion, and red pepper until lightly browned, about 3 minutes. Add Cajun seasoning and cook for 1 minute.
  4. Step 4: Add rice and cook until warmed through, about 3 minutes. Return the shrimp and sausage to the skillet, stirring until heated through, about 2 minutes.
  5. Step 5: Season with sea salt if needed. Garnish with green onions and cilantro (optional). Serve immediately and enjoy!
