Preparation
Start by preparing the liver. In a large resealable bag, blend flour, salt, and pepper. Slice the veal liver into 1-inch strips and shake them in the bag to coat evenly. Remove the liver strips and let them rest on waxed paper in a single layer.
Next, sauté the onions. Heat a large skillet over medium heat and add 2 tablespoons of butter. Once melted, add the minced onions and sauté until they become soft, shiny, and caramelized. Transfer the onions to a side dish and sprinkle with Cajun seasoning for an extra kick of flavor.
