Instructions:
1. Prepare the Dough: In a large mixing bowl, combine the flour, sugar, and salt. In a separate bowl, dissolve the briochin yeast in lukewarm milk. Add the eggs, vanilla extract, and melted butter to the yeast mixture. Pour the wet ingredients into the dry ingredients and mix until a smooth, non-sticky dough forms. If needed, adjust with more flour or milk.
2. First Rise: Knead the dough on a floured surface for 5-7 minutes until it becomes elastic. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm, draft-free place for 1-2 hours, or until doubled in size.
3. Second Rise: Punch down the dough to release air bubbles, knead briefly, and let it rise again for another hour.
4. Shape the Donuts: Roll out the dough to about 1/2 inch thickness on a floured surface. Use a donut cutter or two circular cookie cutters (one larger for the outer edge and one smaller for the hole) to cut out the donuts. Place them on a lightly oiled tray or dish towel, cover, and let them rise for 30 minutes.
5. Fry to Perfection: Heat vegetable oil in a deep pan to 350°F (175°C). Once the oil is hot, reduce the heat to medium-low to ensure even cooking. Carefully drop the donuts into the oil, frying for 1-2 minutes per side until golden brown. Drain on a paper towel-lined plate.
