Ingredients:

  • 2 cups sugar, divided
  • 1/4 cup water
  • 1 can (12 oz.) evaporated milk
  • 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed, softened
  • 4 eggs
  • 1 tsp. vanilla
  • 1 pkg. (2-layer size) white cake mix (Do not use a pudding-in-the-mix cake mix)
  • 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
  • 8 small fresh strawberries

Preparation:

Preheat your oven to 375°F. In a saucepan, combine 1 cup sugar and water, cooking over medium-high heat for 10 minutes until the sugar caramelizes into a deep golden brown syrup. Do not stir. Immediately pour the syrup into a 12-cup fluted tube dish coated with cooking spray, tilting to evenly coat the bottom. Set aside.

In a blender, mix evaporated milk, cream cheese, eggs, vanilla, and the remaining sugar until smooth. Prepare the white cake mix according to the package instructions, then stir in the strawberry gelatin powder. Pour the cake batter over the caramel syrup in the dish. Gently spoon the cream cheese mixture over the cake batter.

Cover the dish with foil sprayed with cooking spray, placing it sprayed side down. Set the dish in a larger pan and add enough water to the larger pan to come halfway up the sides of the tube dish. Bake for 1 hour 15 minutes or until a toothpick inserted near the center comes out clean. Cool completely in the dish.

Refrigerate for 2 hours. Loosen the cake from the dish with a knife, then invert onto a serving plate. Garnish with Cool Whip and fresh strawberries. Enjoy this heavenly dessert that’s sure to impress!
