Ingredients

For the Cake

  • 250 ml (1 cup) unbleached all-purpose flour

  • 3 eggs, separated
  • 1 pinch of cream of tartar
  • 310 ml (1 1/4 cups) sugar
  • 125 ml (1/2 cup) unsalted butter, softened
  • 5 ml (1 tsp) vanilla extract
  • 125 ml (1/2 cup) milk

For the Vanilla Strawberries

  • 1 vanilla pod
  • 375 ml (1 1/2 cups) sliced fresh strawberries
  • 15 ml (1 tbsp) sugar

For the Whipped Cream

  • 375 ml (1 1/2 cups) 35% cream
  • 45 ml (3 tbsp) sugar
  • 5 ml (1 tsp) vanilla extract

Additional: Strawberries, whole or cut to quarters, for garnish

Preparation

Cake

  1. Preheat oven to 180°C (350°F). Butter a 20-cm (8-inch) springform pan and line the bottom with parchment paper.
  2. Combine flour, baking powder, and salt in a bowl. Set aside.
  3. Whip egg whites with cream of tartar until soft peaks form. Gradually add 125 ml (1/2 cup) sugar, beating until stiff peaks form. Set aside.
  4. Beat remaining sugar, butter, egg yolks, and vanilla until smooth. Alternately add dry ingredients and milk on low speed.
  5. Fold in a quarter of the meringue to lighten the batter, then gently fold in the remaining meringue. Pour into the prepared pan.
  6. Bake for 55 minutes. Unmold immediately and let cool completely on a wire rack.

Vanilla Strawberries

  1. Split the vanilla pod lengthwise and scrape out the seeds.
  2. Combine strawberries, sugar, vanilla seeds, and pod in a bowl. Let macerate for 15 minutes. Drain and remove the pod. Set aside.

Whipped Cream

  1. Whip cream, sugar, and vanilla until stiff peaks form. Set aside.

Assembly

  1. Cut the cake horizontally into two layers. Spread 250 ml (1 cup) of whipped cream on each layer.
  2. Place one layer on a serving plate and spread drained vanilla strawberries over the cream.
  3. Top with the second layer, cream side down. Garnish with remaining whipped cream and fresh strawberries.
